What is porterhouse steak?
Porterhouse is cut from the short loin, with a tender strip of meat and a band of fat along the edge. That fat cap is where much of the flavour comes from, so it is worth rendering in the pan. It sits between a rib eye, which is richer and more marbled, and an eye fillet, which is leaner and the most tender. Our porterhouse comes as two 300g steaks, enough for a dinner for two.

How to cook porterhouse
- Take the steaks out of the fridge 30 minutes before cooking and season with sea salt and cracked black pepper.
- Sear in a very hot pan or on the BBQ for 3 to 4 minutes a side for medium-rare.
- Press the fat cap against the pan for a minute to render it.
- Rest for 5 minutes before slicing.
